Roasted Ratatouille
The last of the fresh tomatoes, peppers,
eggplant, and zucchini (Is there really an end to zucchini?) makes for a
fabulous vegetarian main dish, Sunday supper or brunch with friends.
Ingredients:
2 medium red peppers, coarsely chopped
2 medium zucchini, coarsely chopped
2 medium yellow onions, coarsely chopped
2 lbs. fresh tomatoes, coarsely chopped with juice
1/2 cup fresh basil leaves, coarsely torn
1/2 cup grated mozzarella cheese

Loaf or round of
favorite sourdough or French bread
Instructions:
Toss all vegetables (Except the
tomatoes) in Talcott
Carneros Estate Grown
Olive Oil, adding salt and pepper to
taste. Place mixture in a 9"x13" pan (We prefer to use a glass
baking dish in order to closely watch the progress) and roast at
375° approximately 40 minutes until tender and slightly browned,
turning the veggies once midway through roasting to insure even
cooking. Next, mix in tomatoes (with juice) and return to the oven,
continuing to roast until bubbling. Finally, sprinkle with parsley
and torn basil, add cheese and return to oven until the cheese is
melted. Spoon roasted mixture over toasted sourdough bread rounds
brushed with Talcott
Carneros Estate Grown
Olive Oil and serve immediately.
Option: Immediately before adding the cheese,
create 4 wells in the veggie mixture with a large spoon. Gently pour
in a raw egg into each well, then sprinkle entire pan with cheese.
Return to oven and bake 6-8 minutes; watch carefully as the eggs
will cook quickly.
Serve with a glass of Napa
Valley wine and enjoy!
"Jimbo" Prawns
In keeping with our theme
of simple to prepare recipes, this wonderful dish is both quick and
easy!
Ingredients:
1 lb. large prawns
6 cloves garlic - chopped
Talcott Carneros Estate Grown Extra Virgin Olive Oil
Pinch red pepper flakes
Coarsely ground black
pepper (to taste)
Finely chopped Italian parsley
Instructions:
Sauté
prawns, garlic,
black pepper and red
pepper flakes in olive
oil. Cook until
prawns are deep pink and
cooked through, but use
care not to overcook.
Dress cooked prawns generously
with Talcott Carneros Estate Grown
Olive Oil,
a sprinkle of sea salt and
garnish with chopped
Italian parsley.
Sweet Endings Ice
Cream
Approach this desert
with an open mind...this unusual combination of ingredients is
simple to prepare and will undoubtedly change your opinion about
plain vanilla.
Ingredients:
Vanilla bean ice cream
Talcott Carneros Estate Grown Extra Virgin Olive Oil
Grindings of sea salt and course black pepper
Instructions:
Place desired amount of
vanilla ice cream in bowl, drizzle with Talcott Carneros Estate Grown
Extra Virgin Olive Oil and lightly top with
grindings of salt and pepper. No, really...just try it!
The Olive Bar
Fresh olives make a wonderful snack
or hors d'oeuvre for any occasion, however they often have an
undesirable bitter quality. Here is a simple solution which will
eliminate the bitterness and turn your fresh olives into
a surprisingly delicious treat.
Ingredients:
Fresh unseasoned olives from your local supermarket olive bar
Talcott Carneros Estate Grown Extra Virgin Olive Oil
Zest of orange or lemon
Spices as Desired (pepper, oregano, basil, or similar Italian spices serve
wonderfully)
Instructions:
Add desired quantity of fresh olives to boiling water, allow
to boil for one minute, then drain. Toss olives in Talcott Carneros Estate Grown
Extra Virgin Olive Oil. Add citrus zest and spices to taste. Serve warm
and enjoy!
Talcott Salad
A simple fresh and
light salad is a wonderful way to start any meal...
Ingredients:
Fresh mixed seasonal greens
Talcott Carneros Estate Grown Extra Virgin Olive Oil
Balsamic or similar flavorful vinegar (optional)
Blood oranges, grapefruit, or similar citrus, sectioned (and sliced if
large)
Sea salt and fresh ground pepper
Instructions:
Rinse salad greens
thoroughly and drain in salad spinner or pat dry. Line salad plate
with greens shredded or cut into bite sized pieces. Drizzle with Talcott Carneros Estate Grown
Extra Virgin Olive Oil and balsamic vinegar if desired. Sprinkle with sea
salt and fresh ground pepper, garnish with orange or grapefruit
slices. Serve at room temperature and enjoy!
